
FRUITY CHIA SEED PUDDING WITH BLUE SPIRULINA
Ingredients
- 4 tbsp chia seeds
- 200 ml plant milk
- 2 tsp agave nectar
- 1 tsp vanilla extract
- 1 tsp fresh grated ginger optional
- 2 tbsp fresh or frozen red fruit
- 2 tbsp plant yoghurt
- 1-2 tsp acai berry powder optional
- fresh fruit - kiwi, blueberries, raspberries garnish / topping
- coconut chips garnish / topping
Instructions
- Mix the plant milk with blue spirulina
- Mix plant milk with chia, agave, vanilla and ginger and set to one side
- Add red fruit layer to the bottom of 2 glasses
- Spoon chia seed mixture onto the red fruit layer
- Mix yoghurt with acai powder and spoon on top of the blue chia layer
- Top with fresh fruit and coconut chips
- Chill in the fridge for about an hour or overnight
- Dive in to the rainbow colours and blue ocean!
